I have just rooted my Nook Simple Touch and it works really well. The screen quality is better than some other android readers which are really expensive on the market. After rooting everything flows and works fine, even browsing with Opera Mini.
With the old firmware 1.1.0 the wifi network does not work, so to upgrade the firmware you have to side download it to the reader and once it gets in sleep mode it will begin to upgrade itself Go to the page: https://help.barnesandnoble.com/hc/en-us/articles/5379840873371-Having-trouble-connecting-to-your-NOOK-#ManualDL and follow the instructions, then download the file: https://su.barnesandnoble.com/nook/nook2/1.2.2/351e26527e80156183e74be2da2ce89f/nook_1_2_update.zip
Upgrade the firmware

This update is only for firmware 1.2.2, I was impatient and tried to do it on the old firmware and it does not work well as you cannot install apk files or have Wifi connection. So, first read well this post: https://forum.xda-developers.com/t/nst-g-updating-nookmanager-for-fw-1-2-2.3873048/ and then:
The Nook Simple Touch is under Android 2.1 Eclair. With the NookManager you have a few applications installed but you can install yours if you find the apk compatible with that Android version. Use the ES File Explorer to do so. Elisa& List of compatible applications:
For Amazon Kindle download the file from https://forum.xda-developers.com/t/app-eink-friendly-amazon-kindle-3-2-0-35.2024062/page-4#post-84192235 The first time you try to log in you will get the error: Invalid login and password. So, for this old app Amazon requires a 2-step verification. Your initial log in attempt will "fail" but check your email because Amazon will send you a one-time password to use. After that you should be good to go.
You can see all this working in my video:
